Cooper's Cave Ale Company is the realized goal of ale lovers Patty and Ed Bethel, and their son, Adrian. All are Glens Falls natives with backgrounds in food service, restaurant operations and engineering.

In 1999, the Bethels created a year-round neighborhood destination with their products and location next to the Warren County Bike Trail at the corner of Dix Avenue and Sagamore Street in Glens Falls.

Ales, lagers, gourmet sodas and ice cream are all made on premises. As the smallest brewery by volume in New York State, they have been recognized in New York Breweries by Lew Bryson as "one of the most successfully integrated community brewing businesses I have ever seen."

Cooper's Cave has a core staff of six, which swells to 15 during the summer ice cream season. They are continually acquiring new local draught accounts for their sodas and ales. The Bethels promote other locally produced items in their retail/tasting room. The product line is always expanding, and local vendors have been contacted to provide products such as cheese spreads, jerky and bratwurst incorporating Cooper's Cave ales.

The company has been involved in many fund raisers for the Red Cross Battle of the Brews, Juvenile Diabetes Walk, Lake George Arts Project Brews Cruise, Taste of the North Country, Glens Falls Fire Department 100th Anniversary, FOSI-Snow Sculpting Competition, and Glens Falls City Schools.
